Egg Plant Casserole

Ingredients:
1 large egg plant
1 beaten egg
1 small chopped onion
1 cup seasoned package bread stuffing
3 teaspoon butter
salt and pepper

Directions:
Peel and cut egg plant in large chucks.
Cook in small amount of salted water until tender.
Drain.
Combine with egg, onion, 1/2 cup bread stuffing,
butter and seasoning to taste.
Mix lightly and pour into buttered casserole dish.
Sprinkle remaining 1/2 cup bread stuffing on top.
Bake 30 minutes at 350 degrees.
Serve hot
